Artichokes take on a fascinating character after they bloom and ‘go to seed’, and it’s at this time that I find them most attractive. This is a globe artichoke growing in the Chelsea Physic Garden in London, where it is part of the collection of medicinal and health-related plants. — Rich Bergeman
